Ingredients
- 6 slices of bacon halved
- 2 Persian cucumbers thinly sliced
- 2 medium carrots thinly sliced
- 1 avocado sliced
- 4 oz cream cheese softened
- Sesame Seeds for garnish
Instructions
- Preheat oven to 400, line a baking sheet with aluminum foil, set a cooling rack on top
- Lay bacon strips in an even layer, and bake until slightly crisp but still pliable, 11-13 minutes
- While bacon is cooking, cut cucumber, carrots, and avocado into sections roughly the width of the bacon
- When bacon is cool enough to touch, spread an even layer of cream cheese on each slice
- Divide the vegetables evenly between the bacon and place on one end of the bacon strip. Roll up vegetables tightly.
- Garnish with sesame seeds, and serve!
