Ingredients:
  • 3 ounces thinly sliced prosciutto, cut into 30 long, thin strips
  • 30 asparagus spears, trimmed
  • 10 (14 x 9 in.) sheets frozen phyllo dough, thawed
  • cooking spray, such as Spectrum non-GMO olive oil cooking spray
Instructions:
  1. Pre-heat oven to 450
  2. Wrap one strip of prosciutto around the asparagus spear barber pole style
  3. Place one sheet of phyllo on a work surface (cover remaining sheets to prevent drying out), and spray with cooking oil. Cut crossway into thirds to create 3 rectangles.
  4. Place a prosciutto-wrapped asparagus spear vertically at the short end of the rectangle, and roll up.
  5. Arrange rolls on baking sheet, and coat with cooking spray. Repeat process with remaining ingredients.
  6. Bake for 10 minutes, or until phyllo is golden and crispy. Serve warm or at room temperature.
