With all this talk about Gut Health, a lot of us are asking "What foods can we eat to help support a healthy microbiome?" One answer is Jerusalem Artichokes, sometimes called Sunchokes. Jerusalem Artichokes are high in inulin, a prebiotic. Good gut flora, or our microbiome, love inulin! It's a natural fiber that feeds many different types of good bacteria in your gut. This is important because the more diverse your microbiome, the healthier it is.We've found a simple yet delicious recipe from Bon Appetit's online November 2014 recipe archive. Enjoy!

Ingredients
- 2 tbsp Olive Oil
- 2 lbs small Jerusalem Artichokes scrubbed and quartered
- Himalayan Pink Salt and Freshly Ground Pepper
- 4 sprigs Fresh Rosemary
- 1/4 cup Unsalted Butter (1/2 stick)
- 3 tbsp Aged Balsamic Vinegar
Instructions
- Heat oil in a large skillet over medium-high heat
- Add the sunchokes, 1/4 cup of water, season with salt & pepper
- Cover, and stir occasionally until sunchokes are fork-tender, about 8-10 minutes
- Uncover skillet, and stirring occasionally, cook until water is evaporated and sunchokes begin to brown and crisp, another 8-10 minutes
- Transfer to a platter
- Add rosemary and butter to skillet and cook, stirring often, until butter foams then browns, about 4 minutes
- Remove skillet from heat and add vinegar, scrapping up any brown bits
- Spoon brown butter sauce and rosemary over sunchokes
