Chicken Marinade | Mama Jean's Natural Market

Want to wow your guests on Cinco de Mayo or Taco Tuesday? This simple marinade is always a crowd-pleaser! Tamarind soda adds a tangy element to this marinade to balance the sweet. Most Mexican restaurants sell tamarind soda, like local Purple Burrito. If you're having trouble finding it, use lemon, orange, or ginger soda...preferably made with real cane sugar. It's best to let the chicken thighs marinate overnight covered in the refrigerator. This marinade lends itself beautifully to grilling the chicken thighs.

Serves: Makes enough for 15 tacos

Prep Time: 15 minutes

Cook Time: Marinate Overnight

Ingredients:
  • 8 boneless, skinless Chicken Thighs (about 2 lbs.)
  • 1 12.5 oz. bottle of Tamarind Soda, such as Jarritos brand
  • 1/2 cup Soy Sauce or Tamari
  • 3 medium cloves garlic, crushed
  • 1 Tbs. Ground Coriander
  • 2 tsp. Pure Chile Powder, such as ancho
  • 1/4 tsp. Pink Himalayan Salt
Instructions:
  1. Mix all ingredients in a medium-sized bowl
  2. Lay chicken thighs single-layered in a baking dish
  3. Pour marinade over chicken. You want at least half of the thigh sitting in the marinade.
  4. Cover with plastic wrap, and refrigerate overnight, or at least 4-6 hours.
  5. Flip chicken thighs in marinade at least 2 hours before cooking or grilling so that all sides of the thigh have had a chance to soak in the marinade.
