Cashew Yogurt | Mama Jean's Natural Market

This simple Raw, Paleo recipe can be made more savory by omitting the sweetener, or more sweet for things like Raspberry parfaits! Very rich in protein and healthy fats, cashews are versatile enough to add into any dish.

This can be stored in the refrigerator for up to a week.

Serves: makes about 2 cups

Prep Time: 15 minutes

Cook Time: no cooking required

Ingredients:
  • 1 cup Raw Cashews, soaked overnight then drained
  • 1 tsp. freshly squeezed Lemon Juice
  • 1/4 tsp. Pink Himalayan Salt
  • 2 tsp. Honey, add more or less to taste
Instructions:
  1. Puree cashews, lemon juice, salt, and honey in a blender
  2. With blender going, stream in 1/2-2/3 cup water until smooth, and the cashews are a similar texture to yogurt
  3. Transfer to a storage container or serving bowls
  4. Layer with raspberries or berries of your choice, and granola
