Cauliflower Grits and Shrimp
Low-Carb Grits, y'all! Craving Southern cooking, and trying to cut back on carbs? This down-home recipe for "grits" is the key! Cook up some shrimp, and you'll have yourself an *almost* traditional Shrimp & Grits dish.

Ingredients
  

  • 2 medium Cauliflower Heads
  • 1 medium onion diced
  • 1 tbsp good quality cooking oil
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 cloves garlic minced
  • 2 cups Organic Chicken Stock

Instructions
 

  • Cut cauliflower heads into 1 inch cubes, and place in the bowl of a large food processor
  • Process until finely ground, about 1 minute. Texture should resemble corn grits
  • Over medium-high heat, place oil, onion, salt & pepper into a medium saucepan
  • Saute until onion begins to brown
  • Add garlic, chicken stock, and processed cauliflower to pan and stir
  • Cover and cook for 10 minutes. Remove lid, and cook for another 10-15 minutes, or until most of the liquid has been absorbed
  • Remove from heat, and serve warm!
