Homemade Coconut Milk
This coconut milk is delicious with a variety of added flavors such as cinnamon, cayenne, matcha powder, cacao powder, or without added flavors if you want to use it in savory dishes. Make smoothies or chai with it!
Ingredients:
- 2 cups Organic Shredded Coconut Flakes
- 2 cups hot (*not boiling) water
- 2 cups water
- 1 tsp. Organic Pure Vanilla Extract
- 2 Tbl. Local Honey
Preparation:
- In a larg bowl, soak th shredded coconut in hot water for about 20 minutes.
- Pour soaked coconut with its water, the remaining water, vanilla, and honey into a blender. Blend on high until well-mixed.
- In a large bowl, strain liquid through a cheesecloth or nut milk bag. If you’re able, compost the pulp!
- Store milk in a glass container and place in refrigerator. Coconut milk should keep for approximately 3 days.
